What are the different fluid reservoirs on this boat?

Outdrive gear lube, outdrive trim cylinder fluid (for hydraulic cylinders that raise and lower the outdrive), power steering reservoir, and trim tabs reservoir.

It's been a while since having outdrives, but I think that's about it.

Thanks guys. On one of the reservoirs its says to you automatic steering fluid. Which one would that be?

Did you mean automatic transmission fluid? or power steering fluid?
