Scott, I'm at Lake Mead as well and never had a problem filling too slow. I agree with the others, check for a blocked or kinked breather hose line.
Does water come out of the breather vent when the tank gets full? If not, it should which means it is probably blocked. Also, if you listen...
Lake Mead (Nevada) gets a little too hot in the summer time to leave a camper cover up. We average 113 -120 degrees through the end of September, with the night time temps in the mid to high 80s.
I purchased a cockpit cover from Great Lakes. There were great to work with. I use my cockpit cover during the summer months and full canvas during the winter. I agree with CJ - easy to put on and take off.
A friend of mine used nothing but Pledge on his 290 Sea Ray. Sold it 12 years later with the gel coat still looking close to new.... no yellowing what so ever. This was when pledge was available in a spray bottle which made it really to apply. Unfortunately, I have not seen Pledge in spray...
I have a 310 Dancer with 350 Mags and V-Drives. I too average 23-25 knots at 3600-3800 RPMs. Having said that, I believe I could do better if I removed even half of the gear on board. People at the Marina come to me as if I am a hardware store!
There is a great DVD on Twin Engine boat handling by Bennett Productions. Watching it a few times really gives you the basics needed to gain confidence. Having said that, I agree with the rest of the forumn; practice, practice, practice!

I currently run about 23 knots at 3200 - 3400 RPMs. That is fully loaded with fuel, water etc......
I'm not sure about the prop size but I may call Sea Ray as I know my props have not been replaced.
I am also curious with regard to your engines replacement due to a recall...

Go with the 310...... a lot bigger boat for the money. Prior to my 310, I had a 290. Wouldn't trade my 310 for the world..... Okay, okay, maybe for a 360 or 380!
I agree regarding the RV dealer. I purchased a table base at an RV dealer. Not the same quality as the Todd base but it served the purpose. They had a number of poles of varying lengths as well.

I purchased a cockpit cover for my 310 Sundancer from Great Lakes. They were fantastic to deal with, not to mention I saved almost half of the replacement cost of my local Sea Ray dealer. With regard to installing the snaps, it was a breeze...... Fortunately, my boat had a cockpit cover...
I had the same problem. It turned out to be a stuck check valve in the water inlet (blue hose going into the tank) on the hot water heater. I replaced the water inlet with the built in check valve, and that resolved the problem. As a quick fix, you can empty the tank and drill out the check...
With regard to rubber insert, it helps if you position it at an angle to go into the groove in the windshield. Another trick that I have used is on cold days, I heat the isenglass(sp?) with a hair dryer.....
