I’m confident it will pull the weight since it’s a V8 (381hp/401tq) and all wheel drive. My concern is related to the braking as mentioned. The trailer has surge brakes. I may need to check out the weight distribution hitch.

Hole shot could also have a lot to do with the size/type of prop. My boat prop is not awesome out of the hole, but it has a good balance between holeshot and top end. Once again, it's a compromise.

For the OP, mine is a 210BR, 5.0 EFI (TBI) with Alpha 1, and I have never had any issues with power.
I would try a different prop first to determine if that's the issue. Mine runs 48 - 49 mph @ 4800 rpm wide open throttle. It has a 3 blade Mercury Vengeance SS prop. Boat info above.
