I agree that 270AJ models are sensitive to drive trim and tab trim but once you are familiar with manipulating these settings the vessel is comfortably maneuverable.
The "keel walk" you are experiencing results from your drive trim too far down after reaching plane, just as she comes on plane...
FYI - if you want a somewhat scientific before & after horn replacement comparison there is a cool smartphone "sound meter" app you can download free. It won't distinguish "duck" from "train" but it will give you the output measurement.

My '05 shower sump unit needed a full disassembly & cleaning to get it working this year- thought I had a power problem but just had slime limiting the float switch range.
You'll have to patch up some plumbing and wiring, plus a couple of small holes in the deck, but it's easy access basic work. The change you want is one of the differences between the AJ and the cruiser model so the mod you want is not a huge project.
Fast & cheap would be an automotive antenna assy. from Radio Shack or any electronics shop close by. Might need to extend the cable or move the radio to shorten that 20'.
The 2005 270 AJ was shipped with two (identical) rubber drain plugs, one for the livewell, one for the fishbox. When that plug is in place then your livewell will drain from the higher drain located a few inches below the lid.
As for not filling, check the pump, it is the one mounted directly...
