Ideas for ballast (to correct list)

Just to stay on the topic of your post and question, sure, your solution will work.
BUT....
I think if I were you, I’d consider finding the source of the list instead of covering it up with offsetting ballast. Most (all?) boats leave their respective builder sitting level in the water so a list is usually a sign of a problem.

If your boat is a late '80s 340da I have to ask....is the water tank full? It sits under the dinette on the port side ('87-'89) and if its empty it will make a difference. How about fuel tanks? The generator normally sits on the port side. Do you have one?

The fresh water tanks (and usually batteries) on Sea Rays are put on the port side to balance out the extra weight on the starboard side due to the fridge, stove and head.
You should be able to fill it up until she sits level.
Be careful with loose stuff in the bilge areas or out of sight. That stuff gets loose in heavy seas and no telling what can happen.

So I had an 86' 340 EC, not a DA, straight shafts no v-drives, generator was in the back on the center line, no dinette but a couch that pulled out into a bed. I believe your boat is very similar to that if your is "1982 searay 360 vanguar" My water tank was also center line under the galley floor. I would consider possibly adding a second water tank around the sofa if possible. I know I was thinking about that.

How bad of a concern is this for you?
Mine seems to go one way or another depending on tank levels etc...... but it's usually 1" lower on the port side.
I started renting a dock box this past weekend and unloaded many unused/stored items...... and the boat still floats the same.
