Transducer holes in the hull

Hello fellow boaters,
I hope I am in the last stages of a major rebuild on my boat . When I purchased it the 2 transducers for depth and speed had been damaged. One hole had been filled with a brass seacock, the other hole still had the damaged transducer in it. I am trying to decide whether to fill in these 2" holes permanently or use one for my depth finder and leave the seacock in the other. I would appreciate any thoughts on my options here
 
If you're going to put a depth finder in, then use the existing hole (hope the new transducer fits it). Then I would leave the sea cock in... might want a wash down or macerator later. Welcome to CSR!
 
According to the glass folks in our area, the proper way to fill the hole is to sand both sides at an angle so that there is a lot of surface area on the inside and the outside of the hull, then use fiberglass mat and resin to fill. The finished product should look something like a barbell only flatter.

After reading your replies I am leaning toward filling in one hole and leaving in the seacock. Would polyester resin be ok to use as filler or do I need epoxy?
