Anytime you adjust props there are trade offs. Higher end speed typically means a greater pitch - which slows down your outta the hole shot. It may also induce more stress in the engine, and lower your max rpms. Do you do any water sports (tube/ski) or just cruise around? Are you looking for more speed because you believe the boat should go faster, or you want it to go faster?
Find a prop shop, they can guide you. They will want to know your engine, drive ratio, existing prop size, and current top speed/max rpm at WOT. Generally you dont run wide open throttle, except for short periods of time - typically to validate that things appear to work as expected - primary making sure you can reach (and not exceed) the target WOT range for your engine.

You may be asking for the impossible. Does the boat run up to spec now? Do the engine reach rated rpm? If they do changing props will have minimum effect.
