It's down season for us Northeast folks, hence the non-boating chatter.

I'm going with Stevie Ray - his version of Little Wing

Close seconds are
Ozzy - Crazy Train
Van Halen - Eruption
Eric Johnson - Cliffs of Dover
Slayer - Raining Blood (ok, not exactly a true solo)
 
Yeah, that's a hard line to define, right?
Let's go with either.

Not a huge Prince fan. His stuff was good, however overall, I’m more of a Classic Rock or Southern Rock kind of guy and always considered Prince to be more Pop.
But spend a few minutes watching this through and you’ll see why I have more respect for his abilities. He starts at 3:27 if you’re in a hurry. Might not have been the best in a world with Clapton, Hendrix,Lynyrd Skynyrd, Led Zeppelin, Allman Brothers, Stevie Ray Vaughn, etc., in it, but he deserves an honorable mention.
Bonus, the other guys ain’t too shabby either so it pays to spend the time listening to this classic all the way through:

Mark Knopfler - anything he has ever done, but specifically Sultans of Swing, Brothers In Arms, Romeo & Juliet, Down by the Waterline. Many other more obscure songs, but as for “mainstream”, hard to beat!

Peter Frampton-Do you Feel Like I do
Mick Mars-Motley Crue (not really any particular solo but the guy is an amazing guitarist live)

An old high school friend of mine is a founding member of Buckcherry (Keith Nelson) and I was told he won best guitar riff of 1999 or 2000 for 'Lit Up' but have never seen anything official on it. But he is pretty good.
 
Tedesci Trucks Band-Midnight in Harlem- just a great solo with the slide guitar
 
Like the Price solo.
Second Sultans of swing.

But best riff -- Mary Janes Last Dance, Tom Petty
Solo -- Eddie Van Halen in Michael Jackson's Beat it.

Crossing Lake Ontario by boat from Rochester at the end of August ‘19 to see Knopfler in Toronto. Can’t wait
 
I'd like to add a few more obscure guitarists that play a classic guitars. Like Knopfler you know how they are in the first three or four notes.

Brain Setzer, best know for Stray Cat Strut with the Stray Cats.
CSN, Guinevere or Wooden Ships
Chris Isaak, Baby did a Bad Bad Thing, that bass riff is so basic but so deep
Gary Allan, Smoke Rings in the Dark, that opening riff is haunting


Now step way back (for me) Hot Rod Lincoln, I don't know the artist.

You can't do this without adding
Deep Purple, Smoke on the Water
Cheap Trick, Ain't That a Shame ( kinda drums and guitar )
ZZ Top, La Grange
