NC, have you googled your search question looking for power curves for those engines? If you find them they should give you a good look at where your engines are developing their peak torque.
I'd venture a guess that your best fuel economy is going to be slightly above idle, at a point just before you start to generate a bow wave and just before the stern starts to settle down into the water. That speed can be calculated if you google "Calculating Hull Speed" and look for the formula.
