I had the same issue in my 1997 330, but I have carb 7.4, not MPI. It ended up being the Thunderbolt Ignition system. Had the module replaced and the RPM's stayed solid all the way to WOT. I found this after replacing all other electrical components (Spark Plugs, Wires, Cap, Rotor, and Coil)...

Update... I had Servpro come out do a professional extraction and have air movers and dehumidifiers going. They feel confident that they will be able to get all the moisture out. I've was able to create a work-around for the transducer and wired in place so that it can no longer back out...

If your Open throttle is 4750, than cruise at 85% is about 4035. Not too far off from your 4100. Is say you are a little on the high side, but not too bad. Merc says not to exceed 85% max for cruise speed to prolong engine life.
Seems way too fast to me, but I'm running 7.4L blue water inboards with V-drives. My wide open RPM is 4200.
What is your WOT RPM. I would think that you would be really using up the fuel at that RPM.
No. Best way is to swap them between the engines and see if the problem follows. I ended up replacing it since I had an old ICM on one engine and a newer one on the other. They could not be swapped. I replaced it and it did the trick. Runs like a top now.
I troubleshooted the exact same thing. It ended up being the Ignition Control Module. I found this out after replacing Plugs, Wires, Cap, Rotor, Pickup, coil, and Knock Sensor.
